James Miller

James Miller is an emergency physician and self-taught cook whose work explores the flavors that bloom after midnight. Raised in El Paso, he learned to balance heat and heart in his grandmother's kitchen before studying biology and medicine; he completed residency training at a busy county hospital, where potlucks on the ambulance bay shaped his sense of community and cuisine.

Miller is the creator of the indie docuseries Night Rounds Kitchen and the author of the culinary memoir Rounds & Remedies. His essays on food, labor, and care have appeared in small literary journals and local alt-weeklies, and his pop-up, Stitch & Bone, has brought late-shift comfort dishes to parking lots from Tucson to Baltimore. He teaches knife-skills workshops for hospital staff and neighborhood cooks, emphasizing safety, speed, and flavor.

When he isn't on nights at a Baltimore trauma center, James Miller is testing recipes at home, chasing streetlight markets in new cities, and walking his rescue mutt, Caldo. He lives in a narrow blue rowhouse filled with cast iron, pressure cookers, and thrifted diner mugs.
